Baked sweet potato with spicy peanut butter
The combination
of sweet potato, roasted peanuts and spices works so well in this recipe.
I got the idea from an African recipe in the World
Food Cafe 2 cookbook - this is my quick and simple version.
Serves 2
Two sweet potatoes
100g dry roasted peanuts (the type that have spices already added - I
like the Sainsbury's ones)
1 tsp ground cinnamon
2 whole dried chillies, or some chilli powder according to taste
2 tbsp vegan margarine
Preheat the oven to 220c and bake the sweet potatoes for around 45 minutes until soft.
Whizz the dry roasted peanuts in a food processor with the cinnamon and chillies, they want to be well chopped but not powdered. When the potatoes are ready, melt the margarine in a saucepan, stir in the peanut mixture and heat gently. Top the potatoes with the peanut butter and serve.
I like to serve this with roasted cauliflour and tomatoes.
