Rocket and cherry tomato spaghetti
A light, summery meal.
Wholemeal spaghetti
Cherry tomatoes (about nine per person)
1 large handful rocket per person
Vegan parmesan
olive oil for frying
Cook the spaghetti according to the instructions on the pack.
Chop the tomatoes in half. Heat the oil in a frying pan or saucepan, add the tomatoes and cook over a medium heat for five minutes until they have softened. Add the rocket and heat for a further minute until the rocket has wilted.
Drain and serve the spaghetti, add the vegan parmesan and top with the tomatoes and rocket.
